Don't worry you are the new keeper. You have the vehicle and you have completed the V62. It's the same as if you had driven away with a little green slip from the V5 and the original owner didn't bother to inform DVLA. As soon as you apply for tax etc the DVLA would register it to you.
You can insure it for you and you can tax it, though I think taxing vehicles is in hibernation until 2021. The keeper does not have to be the owner that is why it is worded that way. For instance if you bought a car on finance, the finance company own the vehicle but you are the registered keeper.

My question is more about who I put as the Registered Keeper for insurance purposes given that I haven't yet received the V5 in my name? My inclination - as in good faith I have purchased the vehicle and own and, in all practicality am the new keeper, and have receipt and correspondence to that end - is just to put myself as the registered keeper
