Maybe this is balls but I'm never quite sure about steel stems on carbon steerers given torque requirements. I guess you'd be ok with the dual bolt on the Nitto but not sure how comfortable I'd be with a single bolt steerer clamp at low torque settings. From recent experience it doesn't take much over 4nm to pinch carbon, especially with the sharper edges on steel stems.
Did you pinch the carbon steerer or carbon bars? And doesn't a steel stem kinda cancel out a full carbon fork? I feel like alu is the way to go, i think the alloy reached its full potential as a material for stems and San Pelligrino cans
