Can I simply buy any brand of ant+ bluetooth sensors to get this all going?
Yep, theoretically. They're ant+, not Bluetooth, but you should be able to pair whatever and have that app recognise and log them. I used to use my ant+ hrm with strava and other apps when it was supported, found it to be pretty painless.

Not sure if this has changed recently, but using Stravistix (hence the API) is now limited to 100 requests every 15min and 1000 per day. Assuming each segment is an independent API request, a long ride reaches the limit easily, meaning the page won't load as the requests are too many. I didn't use to get this "too many requests" error before.

I’m finding routes made in Stravas route builder do not sync properly with Wahoo app. Even if they are starred.

Remove Wahoo's Strava auth (it's somewhere in the app) and reauth, worked for me.

I’ve been a subscriber to strava for 8 years now. Pretty happy with things. But why oh why do my rides have to be public to take part in some challenges? Nothing is hidden from the strava engine so my rides should remain hidden from all but my followers and still take part in the challenges.

They can't sell your data if you keep the rides private. The challenges that require public data are there to encourage you to make your data public.
(A more nuanced version can be found by reading their privacy policy.)

I don’t actually mind them using my data provided it is fully anonymous. What I don’t want is for random people to click through the leaderboards to see my rides and the routes I take.

It's very hard (often impossible) to make that data "fully anonymous".

Does the digital Internet badge disappear if you change the qualifying rides to private(followers) after you've been awarded it?
Otherwise having stuff public for a bit is just a price you have to pay to get those digital Internet badges.

When you toggle a ride between public/private, strava recalculates the leaderboard. So that doesn't work. Strava's privacy model is pretty terrible.

I think the privacy settings are pretty bug ridden. I have not changed from 'followers only' for as long as I can remember. I joined January Grand Fondo and got the badge, I have joined each Grand Fondo since then and have not got the badge despite completing the challenge.
Last year as long as you did not have the ride set to 'private' then it counted towards the challenge (July Grand Fondo eligibility rules)).
As an aside Strava still has not updated a personal goal to completed despite the fact I completed it and I've done all the reload stuff. -

The myworkouts app only uses Bluetooth to look up combined Speed / Cadence but the Ant+ options look to be working so far. Test ride once checked weather...
