Which 105? If it's one of the older generations with the M10×1 steel axles, the simplest way to get a grip on the dropouts might be just a solid axle and some track nuts. You can get the parts off the shelf https://www.velosolo.co.uk/shophub.html

These or some generic version can be made to work by filing off the lug, but the two screws tend to splay on the back of the dropout. If you have some fabrication skills then you can drill and tap a central hole for a single screw to sit much more neatly. However, unless you really don't value your time, then I'd just say fuck it and buy a Surly Hurdy Gurdy, which is properly designed for the job, does it brilliantly and includes an adaptor for putting a QR, rather than the axle, through it.
There's no reason why these couldn't be made to go outside the dropouts if necessary
