Not to jump on, but I’m after a 1 1/8 ahead, 31.8 clamp, circa 100mm too (obv second to Wadi if you’ve got something for them)! About to pull the trigger on a silver Thomson but those in your original post are way nicer!

Nothing as long as that in stock. I have a couple 125mm but I’ve been using one of them and the other was something I was trying out, chucked a lot more brass on it. Don’t think I like it.

I defo like the one with less brass on it, I would be keen for a 130mm in 10 degree if you happen to do a few, will double check dimensions

You could have a look on eBay and see if you can see any steel quill stems in the right sort of angle and length (bit longer currently than you’d want the finished stem to be) at a decent price. I’ll also look later on this evening.

Ok so I'd like to limit it to like, 6 stems max right now.
If I get 6 people wanting them and work through those then I'd be open to doing more but don't want to take on more than I can handle at the moment.
Construction is fillet brazed, my preference would be non removable faceplates*, unfiled fillets and steerer binders at the rear but I will consider other requests.
*You'll get drop bars through the stem no bother, the steel is really springy and I can position the binder(s) such that you'll be able to reverse the bolt and stick a penny in and wedge the clamp open if you want.
At the moment I'm only offering 1 1/8" steerer and 31.8mm bar clamps.
Minimum stack height will be around 30mm. Minimum handlebar clamp width about the same (the extension tube is 28.6mm wide and need room for the fillet).
Price for one of these custom ones is £55 shipped to your door.
I'll add a post in a day or two with some 'stock' stems, most of which I've made some use of, which will be cheaper. @Ottomanotter I think I have something about the size you asked for in there but I'll dibs you a space in the list anyway and update tomorrow.
In fact, I'll stick everyone who has expressed interest into the list at the moment but this is mainly for my own housekeeping, no obligation on anyone or anything.

If you are interested then I'd need the following dimensions,
Stack height, angle, length.
I prefer to measure length along the stem so at whatever angle you specify. I know some people will measure it at 90deg to the steerer but that just seems weird to me.

It makes it easiest to calculate the reach of the stem, for any given head angle. I think it makes the most sense in that regard, but probably not when you're building stems and need to know the actual length of the tube.

What are people's thoughts on payments for these? Would you pay a deposit before I start making them and then the rest upon completion?
I already have the tubing so I don't need to order anything.
Can't remember how the Stayer ones were organised.

Totally happy with whatever way you want to sort it. If you’ve got one in stock that is pretty much what I’m after I’ll ping you the whole amount over of course, but if making fresh I can do a deposit no trouble if you want a bit of comfort you’re not going to end up with a load of stems!!

I think the stayer payment was all upfront
The only quill stems I have currently are 1 1/8” Kona Velocity ones. I take it you’d be looking for 1”?
