I am so happy this thread exists and is growing exponentially. I have found my people! 💖

Hard to say, we have 3 open 1kg tubs on at the moment and my smaller Experimental Batch™ of Triple Nut waiting. Also the missus takes batches to work (pre-lockdown).

Anyone had PB on bread/toast in Japan? That shit is like a dessert and the bread sizing system is amazing.
-
• #207
Japanese toast? Had that in Japan as a kid. Did not blink because Texas toast.
-
• #208
Not had Texas toast but did you also have that crazy bread numbering system where the number refers to the number of slices so if you bought a "5" you'd get a loaf that was only in five pieces? It was like eating four normal slices stuck together. The bread was soo sweet as well and the PB was full of sugar too. The whole thing should've just been called a cake.
-
• #209
Don't remember it being sweet but yeah - HUUUUGE slices. Awesome.
-

They treat it as a cake. There are plenty places which cut out the inside of the bread into cubes, cover with honey and butter and toast. Then use the shell of bread as a bowl for toasted bread and toppings.

Oh hai PB thread, didn't see you there. After one ok and one failed attempt at MYO using red skin nuts, I bought 5kg of blanched and came up with this. Pretty pleased with it, might try mixing in a few red skins next time. Worked out just over £3/kg by my calculations. I get through a lot of PB so cost is a factor. I also find some brands to oily and loose, and a bit of a challenge to keep on the toast. Anyway, will update with further experiments in PB land as they happen.
Edit: doesn't photograph that well.

Crispy toasted crumpets, lightly buttered then crunchy Whole Earth. Lovely.

What did you use to blend / process them? Did you roast first?
-
• #214
I like the look of your hummus looking peanut butter.
Slightly related, is there a hummus thread? -
• #215
Roasted for about 15 mins, then blended in the Kenwood Chef. The chunk-making stage need a bit of refinement, I used the slicing attachment which kinda of worked, then blended the rest for ages with the blade.

I have always been curious about the stage where they start to release their oil and turn into butter rather than crushed up nuts. Was it a very gradual process? Or did that bit happen quickly?

Used to be a big fan of Morrisons own brand, no palm oil, 100% peanuts and that was it... shame it gives me cold sores so I’m onto almond butter now which hasn’t got as much protein but is cold sore free

yeah it sort of just turns within the space of about 10 seconds, from obvious grains to something more liquid and homogenous. That said, this smooth part, before the chunks were added back in, was not totally smooth, a little bit grainy still, but definitely in the right backet of 'paste' texture. I didn't keep going because it was getting a bit warm from all the processing and I didn't want to cook the oil, which I think might have been what happened in my last batch, it takes on a different small and taste once it warms up too much. I mixed in the chunks and that made it a bit thick so added a couple of tablespoons of walnut oil just to loosen it a touch.

PB is made by crushing/ grinding, rather that chopping, no?
I'm not suggesting putting them through your favourite Porlex or Iberital grinder, but you might have more luck with a pestle and mortar.

On a commercial level I think so. There is actually a grain mill for the chef that might work, but apparently it's a bit weak and they always seems to go for a lot when they come up on ebay. Fuck grinding up 1kg of peanuts by hand every couple of weeks.

hummus thread
If not then start one!
I instantly regret making hummus everytime I get to the de-husking stage. Bigger payback to buy the hummus and make the falafels I think.

I always wanted to see a video of an absolute shit load of peanuts turning into peanut butter in a factory but I've never quite found it. Saw some "how it's made" of peanut butter once but it didn't show the money shot.
-
• #223
That's got the imagination going, you'd want it to be like the peanut equivalent of this:
but the reality is probably way more boring.

I was just watching that. So disappointing.

Oh god, that reminds me of the horse one.
