Most of Eastern Europe seems to have surprising (to an ignorant westerners) amounts of vegan places. Cycled most of the old Yugoslav countries, Hungary, Slovakia, Bulgaria, Czechia and the Baltics and a few other places recently and never went hungry. Even when stuck you can get pizza or pasta without cheese.
