Wheels go really well with it, good choice.
I doubt you'll find a 29.8 with layback, Thomson don't make one and not sure many other companies do either (or at least decent ones). You'd probably have to shim it. Saying that if you changed the saddle I'd imagine you'd get a good bit more setback.
HoldFast are the best straps I've ever used, still have my black set and an NOS BMW Ltd Ed one in its bag ;) They're a bit pricier but super comfy and strong, last forever. Have them on MKS Nuevo NJS pedals and it's a fantastic combo.
10deg Thomsons have the best angle but that's just my opinion ;)
