Eggplant is best just fired over the hob, left to think about what it has done, vaguely chopped and mixed with yoghurt, tahine ,salt and lemon .

Thank you! I've ordered some for cookery book shelves. Let's see how that goes.

Following on from not being able to find any cocoa for the chocolate Guinness cake up thread...
I found some decent quality drinking chocolate (58% cocoa) and just increased relative weight of the drinking chocolate while lowering the amount of caster sugar.
A few more cans prior to decorating and, yes, that is the cake tin base that I forgot to take out as a result.
Nailed it:

Dirt, by Bill Buford came out last week.
It's an account of him moving his family to Lyon and learning to cook. On the basis of his previous work, it should be excellent.
When your LBS opens again, schlep down there and buy a copy.

Ice cream update: the vanilla was splendid. Made lemon today that was delicious. I am now macerating strawberries in sambuca and lime, ready for the third batch.

I need a new saute pan, probably 28cm minimum, preferably 30cm. Any suggestions?
There doesn't seem to be a huge amount out there that I recognise, I looked at the Le Creuset one (although ideally I'd want cheaper) but in that size range they only have the non-stick range and no idea if that's any good.

Is that the toughened one?
https://www.lecreuset.co.uk/toughened-non-stick-shallow-frying-pan-1
We just replaced our Le Creuset milk pans as they were close to 8 years old and the coating was starting to come off. I replaced them like for like with this new toughened range and I am pretty impressed. Most of our cookware is Le Creuset so I am a bit of a fan.

Coleslaw, crisps, something with whole grain mustard if it has the leaves.
I know this, but thanks.
