the mockmill attachment looks awesome, stone grinding flour at home. plan is to use it for spelt rye etc, but will still get bulk white and pizza flour pre ground

Made quick and dirty Pho with leftover roast beef yesterday. One of my favourite things and it makes the whole house smell amazing. Cheated with a bag of store-bought stock, diluted it a bit and added toasted star anise, cloves, garlic, toasted ginger, sugar and fish sauce. Let it steep for a bit after that it's just chucking in all the usual bits; noodles, bean sprouts, coriander (didn't have any thai basil or mint), chillies, lime juice and the thinly sliced leftover (pink) roast beef. Flipping delicious. Leftover leftovers for lunch today were arguably even better. No pics because eating.

We've been down the home made ice cream rabbit hole.
If there is one thing you should try, its brown bread ice cream. My mum used to make it by hand when I was a kid but as with with most things you remember being good when you're small, I assumed I couldn't like it as much as an adult. I was wrong. Its epic.
It has a name problem. Brown bread ice cream sounds gross. Should really be called Toffee Toast ice cream.

Except for the cherry & bacon brownies that I made last week - I should have used sliced pancetta, and the bacon I did use ended up fibrous & chewy.
Cheers boss. I don’t use saltpetre so it’s not as pink as the stuff you buy, but the taste and textures is just obscenely good.
