  • Made quick and dirty Pho with leftover roast beef yesterday. One of my favourite things and it makes the whole house smell amazing. Cheated with a bag of store-bought stock, diluted it a bit and added toasted star anise, cloves, garlic, toasted ginger, sugar and fish sauce. Let it steep for a bit after that it's just chucking in all the usual bits; noodles, bean sprouts, coriander (didn't have any thai basil or mint), chillies, lime juice and the thinly sliced leftover (pink) roast beef. Flipping delicious. Leftover leftovers for lunch today were arguably even better. No pics because eating.
