Super dull response, but if it's the former go to a shop with a good range and try a load out in your budget. Then buy the one you like the best.
For e. g. Borough Kitchen Cook Shop & Cook School in Hampstead is good (the one in Borough had pointless staff when I went).
If it's the later, probably a Wusthof chefs knife or something Japanese with a fancy handle (but not one that looks like it's come of a kung-fu movie).
I'd second the suggestion that you have to try it out in person. For instance, although Global knives are hugely popular I really can't get on with the handle on them and don't like them at all.
