Nice choice!
I inherited a Henckels 4 star chef, and pairing knives from my mum, probably 20-30 years old.
The Burrfection chap has a YouTube channel, but the prices seem quite fair. The Torjiro DP knives look cheaper than almost anywhere else.
Some absolute stunners on there too.

which costs a bit more, but I also noticed that you have to spend £160 to get free shipping from Burrfection, so I continued looking around there and found this
which would be perfect with the big gyuto but it's sold out.
in the meantime, I bought my wife a £10 kitchen devil utility knife from amazon and she's very happy.

I used a Henckels 4 star chef's knife as my everyday, everything kitchen knife for over 10 years. Eventually it became slightly concave near the bolster, from sharpening.
