I used a Henckels 4 star chef's knife as my everyday, everything kitchen knife for over 10 years. Eventually it became slightly concave near the bolster, from sharpening.

I replaced it with a Wusthof Santoku which is now my everyday, everything knife.

As in you're genuinely asking for you? Or it's a game?
Super dull response, but if it's the former go to a shop with a good range and try a load out in your budget. Then buy the one you like the best.
For e. g. Borough Kitchen Cook Shop & Cook School in Hampstead is good (the one in Borough had pointless staff when I went).
If it's the later, probably a Wusthof chefs knife or something Japanese with a fancy handle (but not one that looks like it's come of a kung-fu movie).
If I wanted at least one superb kitchen knife, what would people go for... I want something decent, fed up with my budget kitchen set.
