A traditional Japanese knife is what I'm really after, I'm thinking a Nakiri just cuz I love the shape so much... I still miss my cheapo TK Maxx one that lasted about three months before it fell apart... Loved that knife...

The way to get Damascus to appear is to etch the knife. In this case, however, it looks like they left it in a bit tooo long.

I used a Henckels 4 star chef's knife as my everyday, everything kitchen knife for over 10 years. Eventually it became slightly concave near the bolster, from sharpening.

I inherited a Henckels 4 star chef, and pairing knives from my mum, probably 20-30 years old.
The Burrfection chap has a YouTube channel, but the prices seem quite fair. The Torjiro DP knives look cheaper than almost anywhere else.
Some absolute stunners on there too.

As in you're genuinely asking for you? Or it's a game?
Super dull response, but if it's the former go to a shop with a good range and try a load out in your budget. Then buy the one you like the best.
For e. g. Borough Kitchen Cook Shop & Cook School in Hampstead is good (the one in Borough had pointless staff when I went).
If it's the later, probably a Wusthof chefs knife or something Japanese with a fancy handle (but not one that looks like it's come of a kung-fu movie).

Also not to labour the point but the reasons comparing a selection in real life are important are, 1) all decent knives that are maintained function as well as each other - so personal taste is the only measure. 2) it will prevent you buying based on features and thus reduce likelihood of buyers remorse.

Sharpening nerds: I recently bought a Naniwa flattening stone and it is bowed: Convex on the ridged side so that each end hovers about 0.5 -1mm off the surface. Is this normal?

I have a very nice gyuto that looks etched but is 100% hand forged Damascus. It really depends on the finish.
I dont know if it's been recommended here but https://japanesechefsknife.com/ is great for knives from all price points. I've bought a couple from him over the years and they are always well priced and without custom fees.
