Probably because to test grip you need to push it to the edge and then crash. Repeatedly. Testing for puncture protection and weight, even rolling resistance, is much easier.
YMMV but I find Pirelli tyres very grippy. Very impressed with GP5000s too
Always assumed they used a similar machine to the rolling resistance one to test these things out but i guess you're right. Cheers for the recommendations, will look into them.
