You can probably remove them yourself with a hacksaw and some files.
Why would you rather use callipers though?

I think callipers look much nicer and more brakey.

I think that's dependant on the frame but obviously you are entitled to your opinion!
V-brakes are very powerful if you get good ones and that wouldn't mean removing the posts. But I think they're probably the most ugly of the lot.
Where are you based anyway?

I'd keep them tbh but if you want to get rid and are going to get it repainted anyway then someone like Mario Vaz could do both-easiest way is to just use a torch and melt the brass joining to the frame, otherwise you're cutting and filing.
I have a steel bike with cantilever bosses on the seat stays and forks. I'd much rather use it with callipers.
How easy is it have them removed, and is there any reason not to do this (for example, can the treatment harm the frame)?
I've seen another model of the same bike with callipers instead of cantilevers, so I assume that it was just the buyer's choice when it was ordered (I think it was a custom built frame).
Then I will get it resprayed - can you recommend anyone who can do both jobs?
