My current knowledge is only superior to my previous knowledge, and even that is slipping, but I'd say if you're going the Brooks route (which I'd recommend) you need to first figure out how high your handlebars are in relation to your seat because they recommend different models for different positions. I have sprung and unsprung saddles on different bikes and they're all very comfortable for me.
Basically, I'd say a sprung Flyer or B66 for saddle position below handlebars and unsprung B17 Special (thicker leather) for saddle position above bars.
