  • That stuff is amazing! I fear that my tendency to eat chili-based condiments with a spoon is doing me no good. Nice to know that at least I'm not alone.

  • That sounds banging actually, will pick some up next time I'm at a Chinese supermarket.

  • I want to sort this folding knife out a bit, think it was my dad's and it's marked "made in Sheffield" but other than that I don't know anything about it. What's the best way to clear out the gunk in the slot where the blade folds away? The action is a lot stiffer than I remember it being, hoping a good clean will fix that but I'm not sure what to use on it.

  • Cocktail stick, cotton wool and some isopropyl alcohol? Vodka would work, doubt you'll find any alcohol right now...

  • Warm soapy water will do, just make sure you oil it afterwards to prevent it rusting more. A bit of cruft in the slot is no big deal but you want to clean the pivot area and get some oil in there.

  • Squirt some WD40 in.

  • Likely combination of skin oils and rust and pocket lint/dirt. Compressed air, ear buds with soapy water followed by earbuds with rubbing alcohol on them to clean out any remaining oils. Look for pivot points and add a drop of 3 in 1 oil to keep them moving.

  • WD40 is also a viable option but protect the handles first.

    This is the one I have to have around, it is available from tesco and sainsburys but a great deal cheaper from the chinese cash and carrys. It is available in 740g jars.

    Combination of inherited Henckels, TK Maxx Japanese knife finds and a Henckels Chinese cleaver and wide belly Victorinox that I tend to use most often.

  • Thanks for the advice, sounds easy enough! Just didn't want to do anything stupid that'd damage the knife at all. What's the best way to clean the blade up a little bit. Fine wire wool?

  • Wire wool is fine. Autosol would work too.

  • Copper pan scourer, or green pan scourer are softer than wire wool. Maybe add some bicarb or fine table salt to polish the blade and metal trim.

  • Thanks! Will try those out. The blade isn't too dirty so shouldn't take too much to sort out hopefully.

  • Yes, it is at the end of my road, very handy when you run out but is cash only. Currently they only allow people in with mask and gloves. Have you tried Loon Fung is off Brantwood road N17 and has a wider stock and has steamed buns in the fridge section!!! It is where my kom kom melon knife came from. Also 20l of white vinegar is £5 which is great for cleaning etc.

    Like Hoo Hing near leyton road, great place to have lunch as they have a cafe too. Also have a great range of knives and where my Kiwi knife came from.

  • I pop into Loon Fung occasionally on the way back from Ikea. Hoo Hing is a bit too far east for me.

  • I've realized I really do not need much more than a Victorinox. Nicer ones are nice, sure, but the Vic still gets used the most.

  • They can get wicked sharp, don’t need to be too precious with them and the fibrox grips are much nicer than they look.

    Going to get a Victorinox Chinese cleaver I think, reckon the handle and the grind will be more useful than the Henckels one I have.

  • Not exactly a dramatic transformation but this is now slightly less dirty, significantly less gunky, folds a fair bit more smoothly and is a lot sharper.

  • Anything worth doing to help maintain the handle?

  • Tung oil? Boiled linseed? Something woodsafe. Do you know what the handle os made of?
