I did their sharpening course in January.
I though it was pretty good.
I was disappointed that there wasn't more fire, sparks, smoke and general industrial noise.
Y'know - like a forge. -

Ha, would've made it hard to hear the sharpening advice if the forge'd been going! The giant grinding wheel was loud enough.

You've mention the lack of fire, sparks and smoke a few times.... When lock down is over we can have a trip to a blacksmith that I know. There won't be any knife making or sharpening but there will be all the other forge type stuff.

Looks likes waves crashing at dusk.
It’s a Chinese cleaver, every day kitchen knife, much thinner than a meat cleaver, and razor sharp.
I use a Zwilling twin point one for almost everything, was spying for a fancy version. Looked at the Shun, but the handle is for right handed only...

Yes you right it has worn a bit near the back, last year I went a bit to hard on them bloody ribs I damaged the chopping board Mrs billygoat was not impressed.

Looks lush. Black bean sauce is a favourite of mine. Always have a jar of black beans in chili oil that I will even eat out of a jar.
