As @Tijs pointed out, it's more of a forks choice than a brake one (there are very valid reasons not to want steel disc ones).
Plenty of alternative/better ways to make a nice steel disc fork if you’re not hung up on the tapered blade aesthetic (which makes little to no sense for disc brake applications)
