Different spoke patterns and rims (asymmetric milling on the Fulcrums?) Does the Zonda have a 17mm internal rim width vs the Fulcrum's 19mm? Correct me if I'm talking out of my arse here.
Are these also worth considering? Slightly shallower and heavier though:

I would like some traditional looking shiny silver wheels to accommodate 700x40c tyres. 10 speed Shimano. I have struggled to find any well priced wheels of the sort on eBay and used sections of forums. Frame is steel 130mm spaced but I'm happy to run a 135mm hub in there.
Anything better than these for price? -

Is there a good reason not to buy these https://www.cycledivision.co.uk/cero-rc50-disc-carbon-clincher-wheelset-9026 over equivalent from e.g. lightbicycle? Seem to be a good weight and spec for the price. Prime are cheaper but a lot heavier (I know, I know, it doesn't matter, but I like the feel of lighter wheels on hills as I'm slow and hills around here are steep). Other options is farsports/light bicycle or just building some myself.
I'd ideally like some blingier hubs tied to whatever carbon rims, so I had considered doing a build with hope hubs (because Yorkshire) and whatever disc specific rims I could get.Edit: Soz, that wasn't meant to be a reply @Turkish. Butterfingers.

Well I may as well answer...
If it was me I would build bitex centrelocks to whatever farsports/LB rims. With the right rims and CX rays could be 1200g wheelset. Also way under 700 quid -

1200gr wheelset is a bit unrealistic. About 1500gr is more like it.

All anecdotal evidence I'm afraid from a friend of a friend's best mate's uncle's dog. I definitely recall a race team who had Cero wheels and who had major problems with them, but that was quite a while ago. I'm a total Light Bicycle fanboi though, so treat anything I say about other Crabon Fibber wheels with caution.

Good wheels? Looking at a set of 38mm rim brakes from them (novatec hubs I guess) and despite having had Chinese frames before am more concerned about exploding wheels than a disintegrating fork (no idea why).

On that subject, what’s the opinion about Lightbicycle. They reckon the same depth and width rims on Bitex as Farsports would be around 1300g the pair which seems far too light to be safe or am I paranoid?

I can build a set of LB 55mm rims, CX ray and hope rs4 for £680 all in, about 1580g. Amazing what a mark up cero must have even at £699.

Rim. I’m at best a 75kg rider but - bit over 80 At the moment so not sure about the 20/24 spoke count.

I'm a good 30% more than that and I wouldn't be a bit concerned about 20/24. When i eventually get around to building some LB rims, I'll be experimenting with 16/20 😮

There's no cut off, all other things being equal a lighter bike will always be faster up hill. What people usually forget to calculate after finding out what sign the change has is what magnitude it has. For the common range of wheel masses (say 1kg to 2kg per pair) it's not even going to affect your finishing position in an actual hill climb race. For a trip to the mountains, pick ride and handling, including unpredictable crosswinds and braking, and let the mass come out at whatever the important wheel properties drive it to.
