It's a worthwhile question to ask though, especially when it comes to handing out personal data en masse, you don't want to be giving it to anyone with potentially nefarious intentions.
They basically have the research/data recording infrastructure in place from previous studies they have run (which are based in nutritional science, but are essentially unrelated to COVID-19). It's a bit like that gin distillery in Bristol that's producing hand sanitiser - using already available facilities to help with the effort as it is much quicker and more efficient than starting from scratch.
