Been having some recently that went out of date in December. Seems fine so far, cookies sounds like a good idea.

I used some that was a couple of months out of date without realising and nearly threw up when I drank it.
But given how bad my luck is, everyone else will no doubt be fine! :) -
There's never been a better time to try it :p

It’s fine. The nutrients gradually break down and it doesn’t magically go bad after a year. Depending on conditions of storage, you likely won’t notice a difference.

How far past use by date have people used Huel? Got four bags went out last August. Was thinking of making cookies with it.
