Is there a kit available that allows you to build a watch mechanism, and therefore learn how it all goes together?

I think the preferred approach is to take an inclusive course where you’re shown all the techniques, and come away with a finished working watch. Much like a framebuilding course. I have seen some in the past but have no idea what’s a good one.
