  • Does anyone have a general bread book rec? I want something that covers things like pita, tortillas, buns, etc.

    Brilliant Bread (James Morton) and Paul Hollywood has one too

    I have Flour, Water, Salt, Yeast ...

    I’ve been making some poolish stuff (using Flour, Salt etc book), the only flour I’ve got is a bit weird but it gave a lovely crumpet flavour.

    @r_mash Tartine is good. I didn’t get on with that James Morton one, I’m deffo a believer in less yeast and long prove. Edit: just realised if you want specialty breads Tartine is probably not the read...

  • the problem with tartine is that it's all starter based ... and my starter is dead. :(

    so was looking for some quickie type breads I could make while home officing during these pandemic times ....

  • Is that the overnight one?

    My wife really wants me to make the whole wheat loaf with raisins and coriander seeds from Tartine.

    Problem is it's a bit too nice......

    Yeah true, mine’s died too, 7 years RIP. Deffo try the poolish or biga ones from FWSY if you haven’t. I have the James Morton book so if you want me to take some photos drop me a pm.

    @Bainbridge yep, 500g flour, 500g water and 1/8 tsp yeast. 12-14 hours later mix with 500g more flour, 3/4 tsp yeast and 250g water IIRC. Then a few turns in first hour, first prove for maybe 3, form into two loaves, 1.5hr second prove.

    Interesting what you say about bread being too nice as it’s something I’ve never seen mentioned here but the one reason I don’t bake more bread is self control. It’s probably my favourite food and it goes straight to my waist. I worked damn hard to get from 91kgs to 75kg and since a Christmas injury I’m back to 80 already. Booze and bread will be the death of me.

  • Seconded Dan Lepard, Short and Sweet is a very good all rounder book.

  • Yesterday’s loaves were a bit shit, slow moving, over mixed, over sour.

    Starter was looking banging this morning so I’ve fired that in to a mix, 90/10 white to medium rye, will bake it this eve after an ambient bulk and proof, hopefully will be a bit better!

  • I went rogue with the %’s the other day and produced something only a home baker could love, most ended in the bin. Started my poolish last night for these... Bring on the dad bod.

    The story of all my home baking. It’s probably worth mentioning I work part time as a baker, and my home efforts are pretty much always put to shame by people in this thread.

    Bread bellies for the lot of us.

    I did make the sultana and coriander seeds loaves. Totally delicious but look like shit - not fit for the 'gram.

    Might give one to our neighbour to stop us just eating bread all day. Might not be the most balanced diet.

    Banged out 100k on Zwift earlier to try and mitigate the bread calories but it's only made me more hungry 🤦‍♂️

    I love baking bread but never been tempted but the baker's lifestyle.

    Good bread should be more expensive, but people just won't pay £10 for a loaf.

  • Cheers for the heads up. Got it on good word that my local packaging free shop were on the delivery run, they open Wednesday so I'll wander down.

  • Leeds Bread Co-op, and I'm a cover baker for the exact reason that I couldn't do it full time.

  • When things stabilise a bit I am thinking of offering to bake for people in my local community if they supply the flour.

  • I can just imagine you scoffing at people turning up with Asda strong white.

  • Why not just use your own flour so you can control the process? I’d be surprised if you don’t get anything back, and most likely something that’ll cost more as even great flour costs peanuts per loaf

  • Concern is how long my flour supplies will last

  • I'd just check interest, and if people are keen, just see if you can add another 25kg sack to your order next time.

  • Been on the lookout for a big flour scoop so checked bakery bits earlier. 8 day lead time on processing orders!

  • Never before have I been more delighted to secure two bags of Sainsburys own strong white bread flour

  • Made this last night. Only had white flour. Pretty good. Will try and score some wholemeal flour today on our designated shopping trip alloted time

  • Made this loaf for lunch with a hodgepodge of rye, khorasan and white flour and was surprised it turned out alright, but the scoring needs improvement. As you can see, managed to eat half of it already in the first hour!
