I bought some gram flour in a local cornershop and will experiment with using it 50/50 to wheat flour.

Sounds like a good time to get a grain mill and stock up on grain instead. You won't regret it!

I can't even get hold of malt for homebrewing let alone grain for baking.

Well fuck! I had no idea - that's such crap news.

I'll be honest in saying that baking bread is one of the few things I could do with right now to keep myself vaguely sane, but these selfish cunts aren't half doing a job of it...

Nope, Ken Forkish

If anyone needs a couple of kilos of white organic flour I've got plenty for the next couple of weeks so can spare some.
I'm in SE27. -

I can also vacuum seal and freeze some very active sourdough starter if anyone fancies a go at it.

Hell yes (can't work out when I'd get there).
I figure I can feed it one of the random flours I have in the flat.
Also in for bake club. -

Where are you? Might be able to meet halfway or something.
Also gonna try that rye cookie recipe.
Dangerous times.

can you post??

Sorry, not really up for posting. I don’t have any boxes to send it in and I’d rather avoid the post office queue right now!

This seems far fetched but if you guys want flour posted from Sweden I’d be happy to do so at cost. Won’t be cheap, but if anyone’s up for it I’m happy to
Think I’ll need another few days or a week to recover from this shit though so won’t happen in an instant, but pm me if interested and I’ll sort it out when I’m back on my feet

Bit of an experiment. Made a preferment sourdough for the first time, then 1 1/2 cups of white baker's flour, one cup wholemeal, a handful of sunflower seeds and another big hand of quick oats. Also let the dough rise and added more water during stretch and folds. Haven't cut it open yet.

My flour mission failed but I've looked in the cupboard and I have enough odds and sods to cobble something together. Got a bag of chickpea flour so going to try socca.

My starter is enjoying being used so much, the oven spring on this was pretty mega.
It's going straight to my neighbour, her and her daughter don't have any bread right now as the supermarkets were totally sold out

I got Flour, Water, Salt, Yeast for my birthday yesterday, so here's my attempt at a wholemeal sourdough using the recipe in the book.
I'm fast running our of all flour apart from rye flour, and 100% rye bread isn't my bag. Does anyone know where to get bread flour from in or around Brockley?

It's even harder to get flour than bog roll round here (walthamstow)

Nice work, looks great.
I really like that book, taken a lot from it.
Is that the Cyril Hitz book?
