What is the best non-sourdough recipe until starter is ready? I have a banneton, cast-iron pot, white/wholewheat/rye flour and yeast.

Just found this and have never tried a poolish before. Instructions are easy to follow, but does it say anything about baking temperature and duration? Also, is the pot pre-heated?
