My wife put me in charge of snacks for the hospital while she’s having our baby. Went for a focaccia with roasted tomatoes and burata As part of the hamper. I’m more excited about the sandwich than anything else right now.

Just freestyled a white dough, although I think I've been a bit ambitious firing in with 80% hydration. Lots of stretching and folding to come. Gonna bake one this eve and bang the other in the fridge to have tomorrow - maybe as pizza.

Left the second half of yesterday’s dough in the fridge and baked as focaccia today. Pretty happy with both considering they were just freestyled.
Pizza stone below baking tray has prevented burnt bottom too!

I was amazed at the run on flour; I've had to make sourdough with the strong flour I had in the cupboard, as all the extra strong had gone. Are all these people actually capable of/really going to bake their own?

Was running low on flour as was a neighbour so we placed a joint order for nearly 60kg yesterday so we get the free next day shipping from bakery bits.

It's mental. The only thing that's missing from every shelf in Hackney at the moment is strong white bread flour.

We both usually buy 25kg sacks of organic white flour each and then a few bags of spelt, wholemeal etc so this is a normal size order. But given how supermarkets are selling out we placed our order a week or two earlier than necessary. However I am guessing specialist retailers aren’t having quite the extreme run on stock as general supermarkets.
