Put it this way, you have pretty much instant boost when you pedal and then you brake, instant boost when you pedal and then brake again, start, stop and repeat which I don't think a basic brake set would work, this is more of XT if not if you must on the most basic, SLX ...

They’re are a lot of legit, legal ebikes powered by bosch, shimano and Yamaha BB motors. They’re generally limited to around 16mph, pedal assist, most come with discs, some with Maguras.
They’re amazingly clever and super safe, you should try and get a ride on one.
Cheap hub motor ebikes and amazon e conversion kits are generally pretty sketchy.
I just meant I’ve encountered MT200s a lot on ebikes I’ve sold and they work well, no issues (no more so than any other shimano brake - occasional leaky caliper)
50kph with v brakes sounds like shit ebikes, not my area of expertise tbf.
