How tall are you?
Part of the challenge for us is I’m 6’3.
I can’t decide what the minimum dimensions I’d need for a shower cubicle might be. -

If you can't extend the roof, then you need to cut into the floor to give you more height.

I'm 6ft 1 and the shower tray is 760mm squared which I think is the minimum to make it feel normal. it works fine. Not luxurious at all (and I have another bathroom downstairs with a bigger shower in it) but serves its purpose well.

I’m think sunk shower tray and shower head from ceiling. Was more concerned by width.
We also have a large bathroom. Although part consideration is the ceiling currently slopes do we square it off when extending above to give more options layout wise for main bathroom. -

What about a velux above and then open it when having a shower?
It would help disperse the steam too.

The ceiling in my loft ensuite is 2.1m which is probably slighter higher than the average (Edwardian/Victorian terrace conversion) that I've seen.
I could have got an extra 50mm or so by dropping the floor but I didn't want a step into the bathroom and there were some concerns about getting a sufficient drop for the soil pipe if we did that.
