  • That was skirt steak marinated for 18 hours in an ancho and guajillo chili paste and it was great. I checked my pics and all I could find was a table of mostly empty dishes.

    I would rather focus on the core elements and the condiments rather than the bread. I am from Texas and do know what good tortillas taste like. Tortillas and tamales are a bit like sausages - once you know how to make them and how much work it is, you are more than happy to let someone else do the work for you.

  • Friends gave me a tortilla press for my birthday and I've done it a couple of times now. I definitely agree with this, my home made version is decent after a couple of goes but not notably better than store bought and much more work.

    We do usually make our own pasta, for reference.
