Could just be clumsy me, but torx key slips and then it's your knuckles against extra sharp rotor arms. ouch
Torque on them is tiny so slipping shouldn’t really be a problem, but yeah could see it happening when removing them.
I use a calibrated torque bit in a drill to do em up.

I just drill them to 1 then top them off with a torque wrench. 1 on the drill is about 5nm.
Anyone building a bike nicer than mine isn't relaxing, especially if they're fitting a dropper.
