I don't think I'd ever use an M7 thread if I had the choice because it's not in the preferred size table, so it's always an unnecessary PITA to find replacements if you lose a bolt. Your 6.7mm bore is too big for one anyway. It's almost spot on for M8 ISO coarse (1.25mm pitch), so there's that.
There's not point making it stronger than the piece of wood it's set into. If the M6 threads are sound and made from half decent steel, you'll be able to break the wood before stripping the thread with 6mm of engagement.
