I don't think switching them to a Mac when they're old and have been using Windows for 30 years because it's more convenient for you makes much sense, they'll have to learn a whole new OS.
It's not primarily because it will be more convenient for me, it's primarily because it will be less annoying for them in the first place. Mac OS is just a lot more smooth sailing without any stupid alerts and fuckups, this is what will a) make their life easier and b) my life easier.
And I do not agree one has to "learn" the new OS. It's very much self-explanatory and intuitive, at least for the level these guys are using a computer.
I switched people fighting with android devices to iPhones - and they all fucking love it and use all the functions like a boss, without me even having to explain anything. I do believe switching said Windows 7 users to Catalina will work in a similar fashion.
Of course macs are not cheap, but actually the 2019 Airs are on sale now so price difference isn't that high, and the main factor is it's a device they will be using every day for years to come (quite possibly the last laptop they will buy in their life) so might as well spend a bit more money on something nice.

I'm down with this. Are all the issues sorted with Catalina now then? I've been holding off.
