That's what I was doing in Italy, following recommendations from locals, researching online, avoiding tourist locations. Still didn't work which made us cynical and paranoid in the end.
I agree with Japan you can just wander around and explore. I would also add China and Thailand, which are different enough to be at least surprising or interesting. -

Oh. That’s a real shame. Always eaten well in Italy.

That's why I concluded that Italian food probably isn't for me.

I ate better cycling through Japan eating almost entirely out of Family Mart/Lawson's than i do when trying your average cafe/restaurant outside of London in the UK.
That said i find a lot of traditional Japanese food prep, serving and sometimes the actual food entirely overrated.

Dualit toasters. They are nice but fucking overrated. When we just ate basic bitch square loaves it was ok. But bread that isn’t square tends not to lift up. Instead it gets pushed into the side, gets mashed up and gets stuck. And then the toaster needs to be unplugged and the offending bit of mangled toast removed.

And Dualit kettles are awful. Metal lid means that it's too hot to open the top after it's boiled

Should probably learn to slice bread.
I have one and it's fine.

Arcade Fire
vis. anything "bread"-like.
They do Korean well, though. I had horse tartar / yukhoe, which was just amazing.
They don't do vegetarian particularly well, and if you're after halal, you're on a hiding to nothing*.
* Restrictive diets anywhere forrin are going to be a challenge though, as you need that extra level of familiarity.
