I've pussied out of singlespeed for the last couple of winters but got back on it today after removing the gears last night. Fun skids around Leith Hill!

I need some help guys.
I'd like to get a mountain bike. I want something for exploring off-road rather than going fast at dedicated MTB parks. I'd also like to use if for occasional bike-packing trips.
Something simple, single speed or 1X and rigid.
Having not had a MTB since I was akid in the 90s I don't know where to start looking.
I'm probably looking for a frame to build up as I'm fussy about parts. Also I have a set of 650b disc wheels but that's not a deal breaker. (what's the pros and cons 29 vs 650b?)
Sorry I know that's a lot of questions.
Do you want it?
