Ha! I’ll give you that, they’re not great. Although changing sprockets is a million times better since I replaced the high-lactose stock lockring with a Phil one.

That depends. If you want the adjustment to be stable, tighten them more. On the other hand, if you don't want the lock nuts to detonate in a cheesy explosion, don't tighten them enough to retain adjustment.
Have you got the correct C3 clearance bearings fitted?
Quite why they're specced I'm not sure however I know from experience fitting standard clearance bearings results in them not lasting very long at all.
