I would say removing Bluetooth from the equation would help:

What is your Spotify setting for music quality? Worth checking whether it’s on ‘very high’ and if not, whether that makes it better.

Use a codec like lame, and rip using variable bit rate and it will sound fine.
A bit of dynamic compression helps in a car, as there's so much background noise.

Massively so. Spotify streamed over a bluetooth dongle in the AUX-in sounded like a detuned radio in a tin can. I only ever listen to CDs now.
