You're probably better off with hand-builds than factory wheels for those purposes. You could visit the wheelbuilding thread but the TL;DR of that is 32H Kinlin XR31T on whatever hubs your prejudice makes you pick.
Okay v helpful thanks. The wheelbuilding thread overwhelms me - hubs, rims, spokes, I haven't a clue. Your recommendation is useful. Im on spa cycles now...
Shimano hubs are good, not light but reliable and serviceable. Normal, round, double butted spokes and any decent low profile rim you can find on sale. I think DT460 were 25 each, or something like that.
