Why not get a proper project where you can just disappear into the minutiae and nuance of finding a NOS dashboard from a 1965 Italian Grand Tourer?

Surely this will cure your thirst for tinkering

If I had a large enough garage then 100% I'd do this, but my existing garage is like vehicular Tetris.

Sell/Rent/AirBnB out your flat and buy a place in the country with a barn/triple garage. Have country lanes etc on your doorstep for driving / riding.
