I was going to suggest something like this.
Either something random and esoteric or a classic mini as there are a billion spare parts and options all with the advantage of not being expensive and being comparatively small.

Why not get a proper project where you can just disappear into the minutiae and nuance of finding a NOS dashboard from a 1965 Italian Grand Tourer?
Surely this will cure your thirst for tinkering
If I had a large enough garage then 100% I'd do this, but my existing garage is like vehicular Tetris.
