Aren't they meant to be about alround convenience rather than audio fidelity or perfect noise cancelling? Basically, everyday headphones.
Most users who care will probably have audiophile headphones and noise cancelling headphones for the specific times they need them.
As for the price. Meh. It's Apple. If your phone is >£1k with no phone jack, and the poverty spec headphones are £100, then £250 for the premium headphones seems a logic price point.
