Maybe it comes from being a single speeder so I’m used to always being in the wrong gear but riding the perfect bike for a given terrain just doesn’t appeal.
When I rode my pomp over trails I’ve ridden on mtbs recently it was waaay more fun because I was closer to (or further over in some cases!) the ‘edge’.
I’m building a fixed gravel frame just now and I’ve kept away from going for super size tyre clearances and I’ve kept the headtube angle pretty steep because it’ll just be tons more fun to ride.
