Would be looking for sensible geometry, 4 or 5" forks by one of the big manufacturers (rockshox, fox if you're lucky), 29" wheels, and not too many miles.
Would also think about if you want to do anything else. South Downs way is beautiful, but not very technical. If you may want to do more down the line, worth thinking about something aimed at more than just XC.
Canvassing opinion
If you had £600 ish to spend on a hard tail mtb for day rides on South Downs what would you buy?
If I was buying a new road bike I’d buy a canyon so this was my starting point
