I haven't gotten around to building my wheel yet but my plan was to take a 6 bolt screw on disc adapter and mount it on the threads on a ss hub and use a bolt on cog on the actual 6 bolt mount on the nds of the hub.
I got one of these from eBay and about to do something similar on the commuter. It cost 48p so what could possibly go wrong.
Should be safe as long as you don't intend to brake whilst rolling backwards down a big hill 🙃
