I'll say 26" is probably best as you can run thicker tyres.
Forks wise you're probably looking at 410mm axle to crown.
Get your hydro routed through the head tube and go for Shimano, you'll never go wrong with them. 2 years warranty (XT and below),3 years for XTR.
IF bling is what you're after then get Hope.

It's about 30 or 35 each depending if you need caliper protection or just for the rotor.
