Looked at the website and they do some nice knives:

https://www.dictum.com/en/traditional-hocho-faa/saku-hocho-without-wooden-sheath-santoku-all-purpose-knife-719720 looks like a lovely every day use knife.

Note the ferrule is plastic on that one. I like a horn or wood ferrule though they are probably less strong.

Horn or wood ferule would be nicer tactile experience.

Like to feel a knife before buying it.

Still fancy a set of opinel knives.
