I presume anything too narrow will look ridiculous plus possibly not fit on the rims
Whatever you decide on, those Stans Flow MK3 rims won't be great with narrower tyres, so go wide.
As above, Race Kings or Schwalbe Thunder Burts, but the 2.2" & 2.25" versions, so the cornering tread doesn't end up in the wrong place :-)

G-one Bites are 2.1 so reckon should be ok on those rims.
This is a lot more MTB than I originally intended for Torino-Nice. I was nearly going to do it on my audax bike with largest tyres I could cram on, but I think this should be more fun if a bit slower.
Plus I really can't complain about being lent such a nice bike.
Can anyone recommend a quite wide 27.5 gravel tyre? I'm doing Torino-Nice rally next month and lacking a suitable bike I'm borrowing an Isen G.O.A.T. which currently has massive proper mtb tyres on it. Which are great offroad, but TNR is about 50% road so I need something a little more multi-purpose while not being too skinny (I presume anything too narrow will look ridiculous plus possibly not fit on the rims).
Looking at 'G-One Bites' in 2.1 (from Schwalbe's incomprehensibly large tyre range) or Gravelkings in 1.9? Or WTB Byways?
Would welcome any suggestions of things I've not thought of. I don't care about being hugely fast, but would like something that isn't too terrible on road.
