I guess the bit from Turin up is a bummer, and I've no idea what traffic in the north of Italy is like. I've ridden along the north-of-the-alps option; it's effectively Swiss national cycle route no. 5 and it means a lot of urban around Zürich and the wind in your face between Neuchatel and Lausanne, but otherwise OK.
Engadin has better scenery, but it's a race.
A rough and ready attempt at routing shows around 30km further, but 1500m less ascent going north of Lake Geneva vs. past Lake Como.
